best vegan TACOS




 
Alright. 

One thing I could NOT give up was a fresh, SUBSTANTIAL taco. As a new vegetarian, that is not the biggest fan of tofu and was completely blind to soy substitutes, I created this recipe that is now preferred over beef tacos in my family. They are so quick and easy, and taste AMAZING. Here's what you will need!  

Vegan Tacos Recipe:

olive oil

1 can corn

1 can black beans

1/2 bunch cilantro

juice from 1/2 lime 

corn tortillas (or flour if you prefer)


1. Drain and rinse corn

2. Heat the oil in a large pan

3. Add corn to the pan and stir frequently. Corn should be nice and golden brown!

4. Drain and rinse black beans 

5. Add black beans to the pan and cook for 2ish minutes. Stir cautiously, because the beans could get mushy.

6. Add lime juice. Cook for additional minute then remove from heat.

7. Chop cilantro and add to the pan. Reserve some cilantro for garnish if desired!

8.  Serve on tortillas with lime wedges and reserved cilantro! We top our tacos with fresh pico de gallo, the recipe is below!

🌿If you aren't trying to maintain a vegan meal, you can make these substitutions!
- butter instead of olive oil
- cheese and sour cream on top

🐥And if you looking for some meat (these tacos are filling enough on their own, but to each their own...) you can add this to whatever type of tacos you prefer! My family loves to add it to ground beef or chicken tacos!




Pico de Gallo Recipe:  

cherry tomatoes
onion
cilantro
salt
sugar
white vinegar
(my recipes usually don't have exact measurements... I prefer the add and taste method 😬)

1. Dice cherry tomatoes, onion, and cilantro, and add to a bowl
2. Add a splash of vinegar, a pinch of salt, and a teaspoon of sugar
3. Taste and adjust mixture to your liking
