jackfruit fajitas

 




JACKFRUIT FAJITAS

Quick, easy, one of my absolute favorites. I made some delicious jackfruit for myself and prepared some thinly sliced ribeye steak for my beau. Here's how we did it!


What you will need:

- flour tortillas

- cheese 

- lettuce

- salsa

- sour cream


Marinade for 1 can of Jackfruit)

- Juice from 1 lime 

- 1 teaspoon salt

- 1 teaspoon cumin

- 2 teaspoons chili lime seasoning (from Trader Joe's)

- 1 teaspoon pepper


Mix all of the spices with the lime juice. Place jackfruit in a bag and add spiced juice. Let sit for at least 30 minutes. Heat a pan with 1 Tablespoon of olive oil and add jackfruit. Cook for 20 minutes and serve with pepper mix and toppings.


Pepper Mix:

- olive oil

- 2 bell peppers, different colors

- 1/2 yellow onion

- Juice from 1/2 a lime

- salt and pepper


Julianne the peppers and onion. Heat olive oil over medium/high heat in a pan. Add peppers to the hot pan and season with salt and pepper. Cook the peppers and onion for 20 minutes, stirring constantly. Once tender, load pepper mix onto warmed tortillas. Add jackfruit and top with lettuce, cheese, salsa, and sour cream. 


🌱For a vegan alternative, remove cheese and sour cream as toppings or substitute for a vegan alternative!

🐄For a meatier option, substitute 1 can of jackfruit with 8 oz of thinly cut ribeye steak. When cooking thin cut steak, place in a hot pan for 2 minutes (1 minute per side.) This steak cook VERY quickly.
